Meat

 

Some of these are made up in Big Batches, frozen in single portion size, and are so wonderful as lazy ingredients to many dishes, as well as being good on their own.

White-Cooked Chicken

2 pounds of chicken breast fillet
2 cups water
4 slices of ginger
salt to taste

Cut chicken into 1/2 breast pieces and cook 20 minutes in water, ginger and salt.

Eat hot or cold or as the meat part of my rice bowls. Save liquid as stock for Miracle Marinate or soup stock.

Red-Cooked Chicken

2 pounds of white cooked chicken
1/4 cup soy sauce
4 slices of ginger
1 cup water or stock
1/8 cup juice or juice concentrate
2 green onions, cut up

Bring all to a boil, then simmer 20 minutes. Refrigerate as is. Eat warm or cold or as the meat part of my rice bowls. Why, you may ask, can't I make this without making white-cooked chicken first? Well, when cooking raw chicken, there's a certain amount of "chicken scum" produced. This I strain off before using the stock. Then I can use the liquid left from this as Miracle Marinate.

Eat hot or cold or as the meat part of my rice bowls. Cut into bite-sized pieces and skewered with toothpicks, this is a favorite pot-luck contribution. Save liquid as stock for Miracle Marinate or soup stock.

Hamburger Crumble

1 Tablespoon oil
Garlic and Ginger
1 diced onion
1 diced green pepper
2 pounds of ground meat or meat substitute (I like Morningstar Farms "Burger Style")
1 Tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon black pepper

Heat oil and sautee garlic, ginger, onion and green pepper. Add ground meat, seasonings and brown.

Freeze in baggies as individual servings. Oh, so versitile! Use as the meat part of my rice bowls. Over rice with a little soy sauce. On a roll with barbeque sauce. In a taco with taco sauce. As a wonton or pot-sticker filling. Over pasta with tomato sauce.

Stir-fried meat

Any meat, cut in bite-sized pieces
Marinate 24 hours in
Miracle Marinate
Stir fry in a little oil. Or just a non-stick pan, if you're careful.

Optional: include sliced garlic, shredded ginger and/or green onion bits in marinate or stir-fry.

You can make this in large batches and freeze in individual portions. Easy to add as the meat part of my rice bowls.
