Iron Cake

I had a problem with anemia for a while, and devised this recipe full of iron- and protein-rich sources. One slice has about 1/4 the daily requirement of iron and 12% for protein. I know neither the name nor the ingredients made it sound delicious, but it is.

1/2 c apple juice concentrate
1/2 c prune juice
1/2 c sugar
2 T blackstrap molasses
1 1/2 c
muffin mix
1/2 c quinoa flour
1 c oats
1/2 lb tofu (crumbled)
1 T cinnamon
1 c raisins
1 c sunflower seeds

Put in breadmaker on cake setting and turn on. Or pour into muffin tins bake for 15 minutes at 400 degrees or spread in a cake pan and bake 25 min at 400.

Zucchini Pear Bread

1/2 c apple juice concentrate
1/2 c sugar
2 c
muffin mix
1 T cinnamon
1 T allspice
1 c
shredded zucchini
1 c shredded pears
1 c walnuts

Put in breadmaker on cake setting and turn on. Or pour into muffin tins bake for 15 minutes at 400 degrees or spread in a cake pan and bake 25 min at 400.

Basic Wheat Bread

1 1/4 c water
3 c
bread mix
2 t yeast

Put in breadmaker on whole wheat setting and turn on. They don't call me the Lazy Gourmet for nothing.

Honey Bread

1 1/4 c water
2 T honey
3 c
bread mix
2 t yeast

Put in breadmaker on whole wheat setting and turn on.

Fluffy Bread

1 1/2 c water
1 c
bread mix
2 c white flour
1/4 c sugar
2 t yeast

Put in breadmaker on whole wheat setting and turn on. Yeah, this seems like a lot of sugar, but the result is just wonderfully fluffy and yummy.

The automatic bread maker is one of the greatest inventions of the 20th century.
